Piotr Bińczycki's cuisine is a tribute to Scandinavian minimalism, locality, and seasonality. His philosophy is based on simplicity, respect for the produce, and extracting its full flavor—often through fermentation processes and the skillful combination of unusual textures and aromas. His dishes surprise, intrigue, and tell stories—about the seasons, about a place, and about people. He began his professional career at the Wierzynek Restaurant in Krakow, where he took his first steps as a pastry chef. However, he gained his key experience in Norway, where he worked for almost 13 years in renowned hotels and restaurants, including the three-Michelin-starred Maaemo restaurant. It was there that he understood the power of simplicity and the importance of authenticity in the kitchen. After returning to Poland, he co-founded the Heart by Amaro team in Zakopane, serving as junior sous chef to Chef Wojciech Modest Amaro. He then headed the kitchen at the Dr Irena Eris SPA Hotel in Polanica-Zdrój, consistently developing his vision of cuisine based on quality, emotion, and dialogue with guests. Today, as Executive Chef of Szyszka Restaurant at the Seidorf Hotel, he creates culinary experiences rooted in local produce and the natural beauty of the Karkonosze Mountains. For him, cooking is more than just a craft – it's a creative process, a form of expression, and a way of building relationships.
